I’m so lazy in the kitchen. Even when I’m just cooking for myself (maybe especially so!), I want to keep things as simple as possible, including clean up. I’m all for elaborate dishes… if someone else is cooking and cleaning. Ha! One-pot recipes are a great workaround for that. Delicious meal and minimal dishes? Sign me up.

7 One-Pot Recipes to Save the Day

I feel like everything has really ramped up since September, I’ve been swamped in pretty much everything in my life, and that’s where the one-pan meals come in. There are a ton of recipes made in one pot that are not quite the best—think boiled meat—no thank you! These recipes are all made in either one pot or one sheet pan, and the results are incredible.

To be honest, I do have a bit of a confession, I have definitely ordered in takeout and bought lunch at work more than normal. But that’s ok—it’s October which means a new month to get back on track, but in the meantime, these one-pan dishes are going to save the day!

1. One-Pan Braised Chicken with White Beans and Cabbage

With mushrooms, bacon, white beans and cabbage, this dish is winter in a pan! Focusing on ingredients that are in-season and accessible during the winter was my main focus here, and this recipe is so comforting and delicious.

2. One-Pot Couscous with Shrimp, Zucchini, and Corn

If you’re looking for a more summery vibe, I love this dish! Couscous is one of the best ingredients to cook with because it literally cooks within five minutes—just add it to boiling water, remove from the heat and let it steam! Easy peasy.

3. One-Pot Curried Chicken with Kale

This is one of my all-time favorite recipes! I love how flavourful the rice and kale get with the curry powder, and the chicken is juicy and delicious! I’ve made this with bone-in, skin-on chicken thighs, but I find that they end up making the dish a little too greasy—stick with the boneless, skinless for this one.

4. Kale and Sweet Potato Hash with Chorizo

I know, typically you wouldn’t think of this dish as a one-pan meal, but this brunch (or breakfast for dinner) recipe is perfect for the fall—especially with sweet potatoes.

5. Roasted Salmon Steaks with Broccoli

One day salmon steaks were on special at the grocery store, and this recipe was born! You could also use regular salmon fillets, though they would require slightly less cooking time.

6. Chicken with Cauliflower, Brussels Sprouts, and Carrots

I mean, you can’t go wrong with this combination, just look at that cast of characters! This is one of my favorites to make throughout the winter, and my roommate actually makes this recipe all the time in our apartment in Toronto.

7. Quick and Spicy Tomato Egg Skillet

This is another recipe that you wouldn’t typically think of as a one-dish masterpiece, even though it is! This is one of my favorite brunch recipes that can also double as dinner.

These sound so amazing! I love that they are all low-carb and packed with veggies. After all the baking I’ve been doing, I need some healthy dinners in my life. 🙂
