I totally start craving different foods once spring rolls around! This past week when we were experiencing warm weather, I popped into a local cafe for a fresh and bright salad. Usually, my go-to lunch in winter is soup so it was a welcomed change! Will have to give a few of these recipes from Louisa a go!

We’ve almost made it to spring! I mean it’s officially spring this week, the clocks have sprung forward, it’s just around the corner. I’ve definitely been feeling inspired to cook more spring-y dishes using seasonal produce and ingredients (even if they aren’t *technically* in season quite yet, they will be soon!).

Here are five of my all-time favorite spring recipes I’ve developed over the last nine years of my blog!

 

  • For a busy weeknight:

 

Chicken Asparagus and Lemon Pasta which asparagus, chicken and leeks is the perfect spring pasta dish. Finish it off with a bit of lemon for extra brightness and this is a dinner you’ll be excited to pack for lunch the next day!  

  1. For a weekend brunch with your friends:

A few months ago I moved into an apartment on my own; I’ve always lived with roommates and I’ve found that living alone means I want to have people over all the time! This puff pastry asparagus tart is one of my all-time favorite recipes because it’s so delicious and impressive!

  1. For when you feel like something vegetarian:

I think because of Easter, I always associate spring with eggs. I love making a quick frittata when I want a delicious and filling vegetarian dinner. This one has blistered tomatoes, mushrooms, and fresh parsley.

  1. For when you want something light:

Light asparagus soup. It’s a celebration of all things asparagus and I think one of the best recipes to really enjoy the sweet and grassy flavor of this spring veggie.

  1. For the days where it’s still cold:

Ok, so even when spring officially hits, it might still be a little cold. That’s where this lamb ragu with peas fits in! Lamb is a protein that’s more widely available in the spring.
