5 Salads to Try Before the End of Summer

I can’t believe just how quickly the summer is flying by! My summer travel plans got put on hold so I’ve really been soaking up the time in Toronto–eating out on patios, barbecuing on the rooftop with a view of the CN tower, and spending time in some of our beautiful parks. I’ve been doing a lot of cooking; both developing recipes for the fall and winter but also recipes that make use of the summer bounty.
I asked on Instagram (I’m LivingLou over there!) if people wanted for barbecue or salad recipes this summer and salads won by a landslide. So, here are some new salad recipes and a couple standby favorites for good measure!
1. Vermicelli Salad with Spiralized Zucchini and Carrots
I just got a spiralizer and I am obsessed. I was inspired by Vietnamese rice noodle salads for this recipe and it’s become my favorite all summer. Everyone who I’ve cooked this dish for raves about it. Seriously, it’s so healthy and packed with flavor!
So fresh and bright, the perfect summer salad (if you’re a fan of watermelon!). When you’re choosing a watermelon, look for ones that are symmetrical, free from any damage and heavy for its size. Bonus points if it has a yellow spot on the bottom (this indicates it ripened in the sun).
3. Grilled Zucchini and White Bean Salad
I love the balance of this salad with sweet grilled zucchini, creamy white beans, salty and tangy capers and fresh basil, you truly can’t go wrong. This is a surprising combination that I think will really surprise anyone who gives it a try.
This has already become such a popular salad recipe for me that I had to mention it here again! It’s the perfect combination of fresh veggies, beans and a ton of aromatics.
Farro is one of my favorite grains and it’s completely underrated! This takes the classic tabbouleh flavors and uses farro as a grain. I love this as a side for anything Middle Eastern-inspired.
