After last week’s popular pasta round up, I’m glad Louisa is back this week with some of her favorite soup recipes. Soup, for me, is the perfect lunch on cold days when I’m working from home. But unless it’s a chili, I’m generally not making it from scratch. I can’t wait to try Louisa’s soup picks soon!
Soup has been saving my life recently. I’ve been trying really, really hard to bring my lunch to work every day, and I find that if I make a big pot of soup on the weekend, I can bring it for lunch throughout the week. There is nothing easier than dumping some soup into a container before rushing out the door at the ungodly hour of 6 am. A bunch of my friends and colleagues have also jumped on the soup train; it’s such an easy and healthy dish to cook. I don’t know about you, but I’ve been falling off the healthy eating wagon recently and eating far too much pasta (get my top five pasta recipes here).
5 Soup Recipes to Warm You Up
Guest post by Louisa from Living Lou
These soups will save your life this winter; there’s nothing better than a steaming hot bowl of soup on a cold winter night! If you’re planning on making lots of pureed soups, I highly recommend getting yourself an immersion blender — taking out your blender every time you make soup will drive you crazy. I have this great KitchenAid immersion blender set that I love.
This Moroccan chicken soup is one of the most popular recipes on my site. It’s received the stamp of approval from many of my readers, and it remains to be one of my favorites! It uses flavors of Morocco like cumin, turmeric, and cinnamon. There is a chain of restaurants in Toronto called Joey’s which has an incredible Moroccan chicken soup, which was the inspiration for this recipe.
2. Spicy ginger scallion soup (ready start to finish in just 20 minutes!)
If you’re a fan of Asian-style soups, this spicy ginger scallion soup is a recipe for you. It’s ready in just 20 minutes and super light and healthy (it’s vegan!). With mushrooms, ginger, soy sauce and a hint of cinnamon I actually make this soup at least once a month during the winter, it’s gotten a ton of fabulous reviews also!
3. Six vegetable white bean pesto soup
This is the soup recipe that I make if I feel like I’ve been over-indulging and need a reset. It’s loaded with vegetables (carrots, potatoes, broccoli, green beans and kale) and the secret is that you swirl in pesto just as you serve it. Talk about a flavor bomb!
4. Creamy spiced acorn squash soup
There’s just something about squash that makes the most velvety, smooth soup! This acorn squash soup recipe I developed last year is like a big hug with all your favorite fall aromatic spices like cinnamon, allspice and smoked paprika.
5. Slow cooker black bean soup
I couldn’t have a roundup of soups without a slow cooker recipe on the list! This black bean soup is the best slow cooker black bean soup recipe you’ll find, trust me. I worked on this recipe for such a long time, trying out so many different methods until I finally nailed it. I actually think I’m going to make this tomorrow!
Mmm that black bean soup sounds so good. My winter faves area curried sweet potato and carrot or my signature spicy roast tomato soup
