I can’t believe it’s almost May. I don’t think I’ll be spending Mother’s Day with Meesh this year sadly. But… I think I’m going to be making those French toast sticks for myself 😂 YUM!

6 Mother’s Day Brunch Ideas

With Mother’s Day around the corner, I’ve been brainstorming brunch recipes to make this year. You can definitely make these brunch recipes at any time of the year, but I love making something for my mom on Mother’s Day! I’ve been making her breakfast since I was very little and every year I try and do something a little different.

1. Homemade Lemon Scones

Scones are deceptively easy to make but seem so fancy. These are made with lemon which gives them a fresh, spring-like flavor. You could also swap in orange as well.

2. Blueberry Lemon Pancakes

Pancakes are a favorite in my house, my personal favorite are my chocolate chip pancakes, but these blueberry lemon variety are a crowd-pleaser.

3. Coconut Baked French Toast Sticks

French toast, coated in coconut and baked in the oven. These end up caramelized and delicious. This recipe was inspired by French toast sticks I used to make with my mom when I was growing up, so it definitely has a bit of a nostalgia factor for me.

4. Strawberry Spinach Salad

I’m in the “brunches need salad” camp. Usually, brunch happens in the late morning and early afternoon, so what’s wrong with a little salad? This is a sweeter salad made with strawberries (hello, in season fruits!) with a lighter, homemade poppyseed dressing. And while I definitely wouldn’t serve just this salad for brunch, it’s a good dish to contribute.

5. Broccoli Cheddar Quiche

I’ve made quiche for Mother’s Day and Father’s Day before (and had some total disasters). Thankfully all of those disasters help create this perfect broccoli quiche.

6. Asparagus Egg Tart with Smoked Salmon

I’ve shared this recipe before, but it’s become of my signature brunch dishes. It’s that good.

I won’t be able to spend the day with my mom either, so I am right there with ya to make those french toast sticks in honor of mom, lol!

Unfortunately, I won’t be spending mother’s day with my mum either because we’re on different continents. On a more positive note, MY birthday happens to fall on mother’s day this year and I think I’ll be making those french toast sticks.
