OMG. I’m reading this post feeling completely guilty right now. I ordered takeout twice in the past week. Ever since I moved to Connecticut, I did a pretty good job at kicking my takeout/delivery habit. But, last week I found myself with zero desire to go out or cook in. So take out it was! 6 Recipes for When You Just Don’t Feel Like Cooking

Alright guys, here’s the thing, even if you love cooking, there will be times when it is the last thing you want to do. And guess what, this is ok! Ordering takeout is sometimes needed! But even during those tough times, when you’re so exhausted or worn out that getting off the couch seems like too much, ordering takeout every night will start to take a toll on your body and your budget.
It’s no secret that nourishing our bodies will help us feel better and get through whatever it is we are going through. Whether it is a stressful week at school or work, a breakup, a fight with your best friend or you’re just feeling plain old overwhelmed; there are simple dishes you should have in your back pocket. Those mindless recipes that don’t take an extra ounce of willpower or work. Here are the six of those recipes that I reach for over and over again during those more difficult moments.
1. Quick and Spicy Tomato Egg Skillet
Sometimes you just need to grab a jar of your favorite homemade marinara sauce and make a nourishing, vegetarian dinner in 25 minutes. This is my go-to right now, the sunshiney look of the eggs helps too. 🙂
2. Caramelized Onion and Apple Grilled Cheese
For those times when carbs and gooey cheese is the only answer. I have a method for caramelizing onions in this recipe, but you could also use a store-bought caramelized onion relish/jam instead, and a good melting cheese.
3. Quick Breakfast Quesadillas
While this recipe says “breakfast,” there is nothing wrong with a quesadilla at any time of the day. Breakfast quesadillas (basically, any quesadilla with eggs in them) are the quickest dish to whip up, and I guarantee that you’ll be glad that you did.
4. Moroccan Couscous and Chickpea Salad
Couscous is a kind of pasta that cooks in literally 5 minutes. I like to use it as a base for salads, and this one is inspired by Moroccan flavors with carrots, red pepper, and cumin.
If you follow me on Instagram and watch my Insta stories, you know that I make this Greek salad pretty much 24/7. It might be because it reminds me of all the time I’ve spent in Greece over the years, but this Greek salad is one of my “comfort foods.”
6. One-Pan Chicken with Veggies
I made this recipe again recently and was so pleasantly surprised with myself for just how easy it is. It’s a dump-and-go kind of dish, mindlessly prep the cauliflower, Brussels, and carrots and throw it all in the oven.
I’m DEFINITELY feeling this! My roomie and I went grocery shopping a few days ago, but the first two nights we had nachos for dinner anyway. I often make quesadillas if I’m not too hungry and want a quick snack. I might try out the tomato egg skillet! -Audrey | Brunch at Audrey’s

Ugh, I definitely needed this! I have about 30 minutes between getting home to when the kids are hungry for dinner & need quick & easy go-to meals during the week.
That spicy tomato egg skillet is going to be on my list for next week for sure!
This is SUCH a true to my real life post! Usually when I don’t feel like cooking I throw some cooked pasta, pasta sauce, cheese and cream cheese in a baking dish and cook that in the oven for 30 minutes for instant baked pasta that’s easy but a *little* more special than just pasta from the stove!
