After months of hearty soups and cozy dishes, I’m excited for the fresh produce spring brings. We actually had a mushroom, arugula, and tomato frittata this weekend for an at-home brunch. It was delicious!! Can’t wait to try some of Louisa’s recipes in the coming weeks.

By this time of year, I am itching for spring and I find this comes out most clearly in my cooking. I start to reach for fresh spring produce, even though it may be a little premature. Wishful thinking? Yes, there are still some cold days ahead of us, but it shines a light at the end of the tunnel.
If you’re feeling like me and so ready for spring, here are some of my favorite spring recipes to keep you going through March and April.
Blistered Cherry Tomato and Mushroom Frittata
A vegetarian frittata with cherry tomatoes and mushrooms is my go-to spring brunch recipe. I’ve made this probably five times in the past month or so—it’s incredible and so simple.
Last year I was determined to make a flavorful asparagus soup that really highlighted the ingredient, with leeks and asparagus cooked in butter and finished off with a touch of lime juice, you’ll be shocked at how flavorful this soup is.
This is a dish that I’ve made for Easter for the past couple of years, I find making a quiche makes me feel so accomplished and everyone loves it.
Asparagus Zucchini Tofu Stir Fry
I’m obsessed with making stir frys because they come together so quickly. This one is vegetarian and also reheats really well for great leftovers.
I have a bit of a love-hate relationship with rhubarb, but when paired with strawberries it is incredible. Seeing rhubarb on market shelves is often the first sign that spring is here!
Three Bean Garden Salad with Coconut Dressing
This is a vegan salad that takes a little bit of time to make but is the perfect dish to bring to a potluck, it’s filled with spring produce and looks absolutely beautiful.

I love making a quiche for Easter brunch too! And that broccoli cheddar quiche looks incredible, I might throw some bacon in there too if I’m serving it to my fiance or dad.
