6 Simple, Fresh & Flavourful Plant-Based Recipes

When people ask me to describe my cooking style I always say “simple, fresh and flavorful”. That’s who I am and that’s what I do on Living Lou. I eat a very balanced diet, a combination of plant-based meals, vegetarian dishes, and meat recipes can be found on my site and on my plate any given day.
I have been trying to incorporate more plant-based recipes into my diet recently and here are some of my favorites.
1. Three bean garden salad with asparagus and coconut dressing
The lime and coconut dressing in this three bean and asparagus salad is incredible! This is the perfect recipe for spring and it’s so beautiful.
I make this tahini dressing for everything, but this salad is one of my favorites. It’s similar to a Buddha bowl and is creamy and delicious. Feel free to add some tofu when you’re roasting the sweet potatoes as well!
This is a Middle Eastern-inspired recipe made with onions, lentils, brown rice and spices.
With chickpeas, tons of veggies (sweet potatoes, carrots, kale) and packed with flavor inspired by a Moroccan flavor profile, this soup is without a doubt one of my all-time favorite plant-based dishes. I also love a good vegetarian curry, for another
This is a much lighter, brothier soup. Inspired by some of my favorite Asian soups made with ginger, scallions, soy sauce, and sriracha. Talk about yum.
This is one of my most popular vegan dishes, with sweet potatoes, zucchini, mushrooms, and kidney beans this has all the flavors of a classic chili just without the meat.
That sweet potato, kale and quinoa salad is right up my alley!
