7 Pumpkin Recipes to Make Right Now

Do you feel like we’ve hit peak pumpkin? There is a pumpkin version of everything these days, and while I don’t need pumpkin spiced candles in my life, I do still love a good pumpkin dessert or treat. I think you need to bake with pumpkin at least once every fall (and often, you can cross that off your list at Thanksgiving).
Over the years I’ve posted quite a few pumpkin recipes on my blog, and I’ve rounded up my top seven here!
I’ve learned a few things about baking with pumpkin over the years, the first is that if you add it to cookies they will become cakey instead of chewy (no thank you!), and that the pumpkin itself doesn’t actually add much flavour, it comes from the spices and other ingredients you add to it—I love adding molasses to intensify the flavors!
1. Whole Wheat Pumpkin Chocolate Chips Bars
These are basically pumpkin brownies, and they are to die for! I’ve been making them nonstop over the past couple of weeks, and despite being 100% whole wheat flour, they are still so light and fluffy.
I love making granola, especially in the fall! This recipe uses pureed pumpkin and all your favorite aromatic fall spices for the perfect treat. The secret to making granola? Low and slow—it’ll result in those delicious clumps of granola that everyone loves.
This pie recipe is definitely the recipe that I worked on the hardest for my blog. I think I worked on this for a couple of months? With so many different variations and tests, I finally got it just right. It’s the hybrid between everyone’s favorite Thanksgiving desserts—pumpkin pie and pecan pie.
4. Make Ahead Pumpkin French Toast
This recipe I shared last year, and it was during a time when I was being very conscious about how I spent my time and who I was spending it with. This is a recipe that always reminds me to slow down, savor the moments and spend time with the people who matter.
5. Whole Wheat Pumpkin Quick Bread
This recipe is similar to my pumpkin bars, but it’s a loaf instead! Studded with dried cranberries, this definitely feels a little healthier but still indulgent enough to enjoy with a cup of coffee on a Sunday morning.
These donut muffins were all the rage back in 2013, and for a good reason! You basically make a super light muffin that has the texture of a cakey donut, and then roll them in butter and sugar. So. Good.
My roommate made pumpkin pancakes for breakfast this weekend, and it totally inspired me to write this roundup! I forgot that I had this incredible recipe for pumpkin pancakes that make the perfect weekend brunch.
The Pumpkin Spiced Granola sounds right up my alley. Granola is my ultimate weakness, and the addition of pumpkin makes it so heavenly!

I’m totally living for all things pumpkin right now! I visited the States this October and only found out how many pumpkin-flavoured foods there really are! We don’t have anywhere near a collection like that back in England, but I loved it! Thanks for these great recipes Carly!
