PPS The recipe for the dinner above is from Family Fresh Meals. It’s lasagna soup and I was wary about the amount of tomato involved (diced tomatoes, tomato paste, and V8), but it was delicious!!!
Okay, full confession here: I am obsessed with the crock pot. We never had one growing up and I never really understood the appeal of cooking food all day on the counter top. Until, well, I tried it. Garrett has one and we’ve been having fun experimenting with various recipes.
Pinterest has a million recipes, but they’re not the healthiest in the world. Don’t get me wrong, I don’t mind cheese (obviously– see above), but a lot of them are LOADED with cheese and hidden salt. It takes me forever to scroll through and sift through all the recipes…
So I want to know… what’s your favorite slow cooker recipe?! Any favorites?

I'm totally obsessed with my slowcooker too! I'm actually about to share this mind-blowing bacon jam recipe on my blog in the next couple of days. It's amazing on breakfast sandwiches, but you could put it on pizza, crackers, etc.

You need to try to out crock-pot white chili. I'm not a huge fan of normal chili but my mom makes it about every two weeks and it's a family favorite (especially with crushed up tortilla chips). I can't find the recipe my mom uses but I've looked on Pinterest and this one seems pretty similar–

My family loves our crockpot for the Fall and Winter months. You know it's fall around our house when you see the crockpot on the counter and you have the same meal for a while 🙂
Tacos!!! Literally the easiest thing ever – put 3 boneless, skinless chicken breasts in the crockpot and add a packet of taco seasoning, cook on low until cook through and shred the meat with a fork!
I LOVE the crockpot too! My roommates and I use it a lot. It's nice to go to class and come home to a cooked meal. This recipe isn't super healthy, but boy does it taste good. I could not live with out my crockpot!! My favorite recipe is for Enchilada Soup! It super simple.
In your crockpot add: 2-4 raw chicken breasts, 1 can corn (drained), 1 can black beans (drained/rinsed), 1 can pinto beans (drained/rinsed), 1 can diced tomatoes, 1 can enchilada sauce, 1 packet taco seasoning (or just make your own!) and 1 carton chicken broth. Cook on low for 4-5 hours. Shred the chicken with a fork, and its ready! Top with cilantro, cheese, or and sour cream.
I intend to add the recipe to my blog soon! I make it all the time, and we eat off the leftovers for a few days.

Slow Cooker red beans and rice are great, but be sure to boil the red beans before you slow cook them, for food safety reasons.

My mom makes the best beef stew in her crock pot! I need to break mine out for the season now that it's getting cool outside 🙂

Chili is only good when made in a crock pot! You will never go back once you make it in a crock pot!

When I was growing up my mom used to cook food in the crock pot and it would make the whole house smell delicious! Williams-Sonoma has a slow cooker/crock pot cook book with some really good recipes int it.

anything from the skinnytaste website has been amazing-turkey chili, her chicken taco chili is so good my co-workers will look into the break room to see what smells so good. Plus, her recipes freeze super well. Plus everything is healthy and the nutritional info is right there!
I love love love my crock-pot hand-me-down from my mom! Like many have mentioned chili is always delicious and easy and there are always some fun variations (turkey chili, white bean chicken chili, etc) but I always love making BBQ chicken too! I've been wanting to try buffalo chicken meatballs, taco chicken bowls, and I may or may not have a whole Pinterest board dedicated to all slow cooker recipes!
I love the crockpot too! It's so nice to throw all the ingredients in the morning and by dinner time you have a delicious meal all ready to go. My boyfriend and I just made French onion soup over the weekend which was amazing (recipe: http://kitchensimplicity.com/slow-cooker-french-onion-soup/). And I'm sure you could find other soup recipes that would be great in the crockpot and more on the healthy side!
