Our grocery store has been having amazing
sales on avocados. They’re crazy cheap right now and I have not been able to resist stocking up. Garrett loves to eat them plain, I like to toss them in salads, and we both really love avocado toast. I think we’ve had it at least once a day for the past week.
I’m a firm believer that you can make avocado toast with just about anything in your refrigerator. Whatever you’re craving, you can find a way to make it work for avocado toast. Sometimes I end up with a combination that’s more like an open-faced sandwich!
Here are four super simple and super delicious combinations:
RED PEPPER FLAKES // This is such a great combination because there’s a real kick to it! I drizzle just a tiny bit of olive oil over the avocado and then sprinkle the pepper.
RADISHES // Radishes are my favorite avocado toast topping. The slices give the toast a delicious crisp crunch with almost a spicy taste. Radishes are not for everyone, but I can’t get enough! I thinly slice the radishes and layer over mashed avocado with a dash of salt.
TOMATOES // This is Garrett’s first pick for avocado toast. Fresh tomato slices layered over avocado slices with a slight dusting of salt.
CAPRESE // This is the most decadent of the bunch. It’s way more filling too, but worth it if you’re looking for a good lunch option. It’s just a caprese salad on avocado toast. A few slices of mozzarella, a couple of tomatoes, some basil, and a drizzle of balsamic.
