RECIPE: Holy Guacamole!

Louisa from Living Lou is back today with an amazing snack for your next girls’ night in. I don’t know anyone who doesn’t love chips and salsa (and guacamole, of course). In my family, “chips and salsa” is basically a major food group and we crave it like nothing else. Yum!

Girls’ Night In Guacamole and Salsa
I’m back with another recipe! And this a recipe that I think you’re really going to love because it’s perfect for a girls’ night in. I love spending time with my girlfriends and while it’s amazing to go out for dinner or drinks, sometimes it’s nice to save some money, sport our favorite sweats, and have a girl’ night in. Throughout high school and college I always have had friends over, whether it’s for a study group, a relaxing night in, a group project, or maybe we just need a good venting session after a difficult week. No matter what the occasion, I find that we’re always starving and I run out of snacks quickly because we’re always munching on something. I love trying out different kinds of guacamoles and salsas on these nights because I think they are the ultimate snack. Recently I’ve started to make this chunky guacamole (loaded with mango and tomato) and it’s quickly become a girls’ night staple.  
What do you usually eat on your girls’ nights? Just grab a bag (or two) of chips and whip up these dips, I guarantee you’ll have a couple people asking you where you got the recipes. 
Today’s two tips:
1. What is a dice? 
Dicing is basically chopping your ingredient into uniform cubes. It’s perfect for a salsa aor guacamole. 
2. Why are you crushing the garlic? 
Nobody wants to eat a huge chunk of raw garlic, so crushing it using a garlic press (one of my “must haves” for your kitchen) crushes the garlic into a pulp so no one ends up eating a chunk of garlic. Crushing garlic is the best way to use garlic if you’re using it in its raw form or if you want the garlic to disperse evenly throughout your dish (if you’re making meatballs, for example). 
Chucky Guacamole
Ingredients:
3 avocados, mashed
1 tomato, diced
1 mango, diced
½ red onion, diced
3 cloves garlic, crushed
¼ cup minced cilantro
2 tbsp lemon juice (or lime)
½ tsp salt
Directions:
In a large bowl, mix mashed avocados with tomato, mango, red onion and garlic. 
Stir in cilantro and lemon juice. Season with salt.
Serve immediately. 
Fresh Salsa
Ingredients:
2 tomatoes, diced
½ red onion, diced
1 jalapeno pepper, diced (can use less if you don’t want spicy)
2 tbsp minced cilantro
2 tbsp lime juice
½ tsp salt
Directions:
In a large bowl, toss together all ingredients. 
Serve immediately.

Guacamole is one of my favorite snacks! It tastes so creamy and indulgent, but avocados are really good for you. One of my favorite things about living in Southern California is how many ripe, yummy avocados we have year round!
