Yea, so yesterday I posted about working out… and now I’m posting about a single serve cookie. Oh goodness. This is my life.
Well, I (finally) downloaded the Pinterest app onto my iPad and I’m now even more addicted to pinning. It’s such a good five minute break! I totally use the app whenever I’m desperate for some inspiration. So I’m sitting on the couch the other day trying to talk myself out of walking to Pinkberry for yogurt (but really the chocolate chips…), scrolling through Pinterest. And there it is. A recipe for a single serving chocolate chip cookie.
Did I mention that it only takes one minute to make?
Luckily, I had all the ingredients ready to go since I had just made an entire batch of cookies on Memorial Day. (Don’t worry, they were shared with friends.) The pictures on No. 2 Pencil looked so good and I truly was crossing my fingers that I wouldn’t mess it up too badly.
Guess what! It’s absolutely as easy as it seems! And… it’s even more delicious than you’d expect a cookie in a mug to taste.
The recipe is pretty much the same as a regular chocolate chip cookie recipe, just miniature of course!
Melt one tablespoon of butter in a mug. Then stir in one tablespoon of granulated sugar, one tablespoon of brown sugar, three drops of vanilla extract, and a pinch of salt! Then stir in one egg yolk (I saved the white for an omelet!). Mix in just under 1/4 cup of flour and then pour as many chocolate chips as you’d like. Mix it all up and microwave for 60 seconds.
Please, please don’t hate me for telling you about this if you’re not already aware! Confession… I’ve made two of these babies already. In one day. Whoops. It’s almost too easy and definitely too delicious!
