7 Fall Weeknight Recipes

Oh, these quick and easy recipes from Louisa this week sound delicious! Despite my belief that we still have a couple weeks left of summer, fall temperatures crept in this weekend. (I legit had to wear a coat two days in a row 😩.) It was so chilly and rainy yesterday that we did sandwiches and soup for lunch at home for a little hygge vibe. Can’t wait to try these!

Time! We can never get enough of it. I find when I’m really busy, cooking can easily be one of the things that falls by the wayside. I’ll find myself falling out of my routine and having to buy lunches and dinners–which is not great for your budget! I love cooking in the fall, so I am trying to make an effort to make more of these quick dinners this season.

1. Chipotle and broccoli macaroni and cheese

Take your homemade macaroni and cheese and elevate it! This dish is ready in under 30 minutes.

2. Vegetarian Singapore Noodles

This is a go-to dish for me, I actually made it again last week. Ready in under 30 minutes and a quick and filling vegetarian dish.

3. Quick roasted teriyaki salmon

This recipe has received rave reviews and is the perfect quick fish dish to make on a weeknight. Serve with a salad and you’ll be good to go.

 

4. Quick and spicy tomato egg skillet

This works for breakfast and dinner, so easy and delicious. One of those recipes I make when my fridge is empty.

5. 5-ingredinet butternut squash soup

Butternut squash is one of my favourite fall ingredients and it shines in this recipe. Perfect to make after work.

6. Kale and sweet potato hash with chorizo

Eggs will always save your life on busy weeknights! This is one of my favourite recipes because of the balance of the kale, sweet potato and chorizo.

7. Moroccan couscous and chickpea salad

15 minutes is all you’ll need for this quick salad recipe–that’s the reason why I love couscous so much!
