Pumpkin Spice Blondies

I like to keep chocolate chips on hand so I can whip up cookies at a moment’s notice. Seriously in 20 minutes I can have fresh, homemade cookies for guests or for a late night craving. I was at the grocery store picking up some more morsels and spotted a display of Toll House Pumpkin Spice Chips. I was on the fence about them when I saw them online and I was even more on the fence about them when I spotted them in person. 
The chips are very orange. I don’t mind the taste of pumpkin spice lattes, but the orange coloring grosses me out. I decided to purchase them because they were on sale (#sucker) and I wanted to report back to my mom how they were.
This may have been my best purchase of October. There are two recipes on the back and I decided to make the blondies. Pumpkin Spice Blondies. They’re so good!!!
From the package:
Ingredients:
2 1/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups packed brown sugar
3/4 cup (1 1/2 sticks) Crisco
3 large eggs
1 teaspoon vanilla extract
1 2/3 cups (10-oz. pkg.) Toll House Pumpkin Spice Morsels, divided
Instructions:
1. Preheat oven to 350°F. Grease 15 x 10-inch jelly-roll pan.
2. Combine flour, baking powder and salt in small bowl. Beat sugar and butter in large mixer bowl until creamy. Beat in eggs and vanilla extract. Gradually beat in flour mixture. Stir in 1 1/3 cups morsels. Spread into prepared pan. Sprinkle with remaining 1/3 cup morsels.
3. Bake for 20 to 25 minutes or until top is golden brown. Cool in pan on wire rack. Cut into bars. Store tightly covered.
Just a couple of notes from me! The dough was pretty “wet” but with the baking powder, it does fluff up quite a bit. Definitely go with the 15 x 10-inch dish (or something of equivalent size) even though when you spread the dough it will feel like the skimpiest layer. Take your time, be patient, and use a floured spoon to get the dough even and to the corners. I also recommend cutting smaller “bars.” I made brownie sized squares but these little guys are very rich; you don’t need more than a few bites to get the taste!
